How to make Strawberries 'n' Cream Granola Bars?


Ingredients:

  • 2 cups old-fashioned oats
  • 1/2 cup freeze-dried strawberries, crushed or roughly chopped
  • 1/2 cup nut butter (almond or cashew works great)
  • 1/3 cup honey or maple syrup
  • 1/4 cup dried coconut flakes (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup white chocolate chips (for the “cream” part)
  • Optional: 1–2 tablespoons chia seeds or ground flaxseed for extra nutrition

Instructions:

  1. Warm the Base: In a saucepan over low heat, stir nut butter and honey until smooth and combined. Remove from heat and stir in vanilla and salt.
  2. Combine Dry Ingredients: In a large bowl, mix oats, freeze-dried strawberries, coconut, and seeds if using.
  3. Mix Together: Pour the warm mixture over the dry ingredients and stir until everything is coated. Fold in white chocolate chips last (let the mixture cool a bit first so they don’t melt).
  4. Press & Chill: Press into a parchment-lined 8x8" pan. Chill in the fridge for 1–2 hours until firm, then slice into bars.
  5. Store: Keep in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
