For a savory-sweet contrast, this chicken salad has a creamy, tangy dressing made with apple cider vinegar, Dijon mustard, and a little honey. Serve it on toasted sourdough bread with fresh herbs and crisp nuts for the ideal dinner.


Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons honey (optional)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon celery seeds
  • 3 1/2 cups shredded rotisserie chicken breast (12 oz)
  • 1/2 cup roasted unsalted almonds, chopped
  • 1 tablespoon chopped fresh tarragon
  • 1/4 cup sliced fresh chives, plus more for serving
  • 8 slices sourdough bread (1/2 inch thick), toasted
  • 3 small radishes, thinly sliced


Directions

Step 1: In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey (if using), salt, and celery seeds.


Step 2: Include the chopped almonds, tarragon, chives, and shredded rotisserie chicken. Mix until the dressing is evenly distributed over the chicken.


Step 3: Evenly distribute the chicken salad among the slices of toasted sourdough bread.


Step 4: Add more chives and thinly sliced radishes on top. Serve right away and savor!
