[Recipes] Instant Pot Chicken Pho

The thick broth and calming aromas of pho, a fragrant and cozy Vietnamese soup, are well-known. This Instant Pot variation allows you to add leftover chicken at the end for a quick and filling dinner, eliminating the need for the typical slow simmering of the broth. To make your pho more vibrant, add fresh veggies like bean sprouts, cilantro, and serrano chilies on top!


Ingredients

  • 4 cups low-sodium chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 cinnamon stick
  • 3-4 whole cloves
  • 3-4 star anise
  • 1-inch piece of ginger, sliced
  • 2-3 whole shallots, peeled
  • 8 ounces rice noodles
  • 2 cups shredded cooked chicken (leftover rotisserie chicken works well)


For Toppings:

  • Fresh cilantro leaves
  • Bean sprouts
  • Sliced serrano chiles
  • Lime wedges
  • Sriracha (optional)
  • Hoisin sauce (optional)


Instructions

Step 1: Get the broth ready

  • Fill the Instant Pot with the following ingredients: sugar, star anise, cloves, ginger, shallots, fish sauce, cinnamon stick, and chicken broth.
  • Put the Instant Pot on "Pressure Cook" for 10 minutes on high pressure after sealing the lid.


Step 2: Prepare the noodles.

  • Prepare the rice noodles as directed on the package while the broth cooks. After draining, set away.


Step 3: Strain and Quickly Release the Broth

  • Release the pressure gradually after the cooking time is over.
  • To get rid of the solids (scallions, ginger, and spices), open the Instant Pot and drain the broth into a basin.


Step 4: Put the Pho together

  • Put the Instant Pot back with the strained broth. After adding the shredded chicken, give it two to three minutes to warm through.
  • Spoon cooked noodles into each bowl. Over the noodles, ladle the chicken mixture and broth.


Step 5: Garnish and Present

  • Add fresh cilantro, lime wedges, bean sprouts, serrano chiles, and, if you'd like, a drizzle of sriracha or hoisin sauce on top of your pho.

TIPS
  • Don't be afraid to experiment with toppings! For extra taste, add fresh mint, Thai basil, or finely sliced onions.
  • To add more depth and flavor to your soup, toast the star anise, cloves, and cinnamon stick in the Instant Pot before adding the liquid.
