[Recipes] Quick and Easy Chicken Curry

With its soft rotisserie chicken and a rich, creamy sauce made with curry powder, yogurt, and heavy cream, this easy curry dish is a lifesaver on hectic evenings. For a filling, full supper, serve it with store-bought naan and fluffy white rice.


Ingredients

For the Curry:

  • 1 ½ tablespoons olive oil
  • 1 small yellow onion, thinly sliced
  • 2 teaspoons curry powder
  • ½ cup plain yogurt
  • ¾ cup heavy cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes, drained (optional)


For the Protein and Base:

  • Meat from 1 rotisserie chicken, sliced or shredded
  • 1 cup white rice (uncooked)


For Garnish:

  • ¼ cup fresh cilantro leaves, roughly chopped


Instructions

Step 1: Prepare the rice.

  • As directed on the packaging, prepare the rice and keep it warm.


Step 2: Add the onion and sauté.

  • In a skillet, heat the olive oil over medium-low heat.
  • Add the sliced onion and simmer for about 7 minutes, stirring periodically, until it is tender.


Step 3: Prepare the curry sauce.

  • To release the aroma, sprinkle the onions with curry powder and toss for one minute.
  • Stir together the heavy cream and yogurt.
  • For three minutes, simmer the mixture moderately.
  • Add drained diced tomatoes (if using) and salt and pepper. Take off the heat.


Step 4: Put the Dish Together Divide the prepared rice into separate bowls.

  • Place shredded chicken on top of each serving.
  • Over the rice and chicken, spoon the curry sauce.
  • Add some fresh cilantro as a garnish.

TIPS
  • When sautéing the onions, add a pinch of cayenne pepper or red chili flakes for a spicier curry.
