Tender chicken and a rich, savory sauce come together in this soothing, well-balanced dish of creamy chicken and mushroom pasta. The creamy sauce is brightened with a dash of sherry vinegar and fresh tarragon, making for a delightfully filling dinner. Ingredients
For the Pasta:
- 8 ounces wide egg noodles
- 3 tablespoons unsalted butter, divided
For the Mushroom Sauce:
- ¼ cup olive oil, divided
- 24 ounces sliced cremini mushrooms
- 1 ¾ teaspoons kosher salt, divided
- 1 ½ cups unsalted chicken broth
- ¾ cup half-and-half
- 2 teaspoons sherry vinegar
- 2 cups shredded cooked chicken breast (from 1 rotisserie chicken)
- 3 tablespoons chopped fresh tarragon, divided
Instructions
Step 1: Prepare the pasta.
- As directed on the package, bring the egg noodles to a boil in a big pot.
- After draining, put the noodles back in the pot. Add 1 tablespoon of butter, toss, and cover slightly with a lid to stay warm.
Step 2: Add the mushrooms and sauté.
- In a large, high-sided skillet, heat 3 tablespoons of olive oil over medium-high heat.
- After spreading the mushrooms evenly, sauté them for three to four minutes without stirring, or until they start to become golden.、
- Add the mushrooms and simmer until browned in places, about 4 more minutes.
- Toss in the remaining 1 tablespoon of olive oil, then heat for another 3 to 5 minutes without stirring, until the food is soft and evenly browned.
Step 3: Prepare the Sauce
- Add ¾ teaspoon of salt to the mushrooms and mix them together.
- Heat the skillet over medium heat and add the chicken broth and half-and-half.
- Allow the sauce to gradually thicken by cooking it for 8 to 10 minutes. Take off the heat.
Step 4: Complete the Meal
- Add the remaining 2 tablespoons of butter and stir until melted, along with the sherry vinegar.
- Add the remaining 1 teaspoon of salt, 2 tablespoons of chopped tarragon, and the shredded chicken.
Step 5: Put Together and Serve
- Place the creamy mushroom mixture over the egg noodles and sprinkle the remaining 1 tablespoon of tarragon on top.
