This vibrant, refreshing salad features sweet grilled corn, creamy avocado, and tender grilled chicken, all tossed together for a perfect balance of flavors. It’s a light, satisfying meal that’s easy to prepare and perfect for any time of the year.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 ears of corn, husked
  • 1 ripe avocado, diced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice (or more, to taste)
  • 1 teaspoon chili powder (optional)
  • Salt and pepper to taste


Instructions:

  1. Grill the Chicken and Corn: Preheat the grill or grill pan to medium-high heat. Drizzle the chicken breasts with a bit of olive oil, and season with salt, pepper, and chili powder (if using). Grill the chicken for 6-7 minutes per side, or until cooked through. At the same time, grill the corn, turning occasionally, for about 10 minutes until lightly charred and tender.
  2. Prepare the Salad: While the chicken and corn are grilling, dice the avocado, slice the red onion, and halve the cherry tomatoes. Place all the veggies into a large bowl and add the chopped cilantro.
  3. Assemble the Salad: Once the chicken and corn are cooked, let the chicken rest for a few minutes before slicing it thinly. Cut the kernels off the corn and add both the chicken and corn to the salad bowl.
  4. Dress and Serve: Drizzle the salad with olive oil and lime juice, then toss gently to combine. Season with additional salt and pepper to taste. Serve immediately and enjoy!
