Ingredients:
- 2 boneless, skinless chicken breasts
- 2 ears of corn, husked
- 1 ripe avocado, diced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice (or more, to taste)
- 1 teaspoon chili powder (optional)
- Salt and pepper to taste
Instructions:
- Grill the Chicken and Corn: Preheat the grill or grill pan to medium-high heat. Drizzle the chicken breasts with a bit of olive oil, and season with salt, pepper, and chili powder (if using). Grill the chicken for 6-7 minutes per side, or until cooked through. At the same time, grill the corn, turning occasionally, for about 10 minutes until lightly charred and tender.
- Prepare the Salad: While the chicken and corn are grilling, dice the avocado, slice the red onion, and halve the cherry tomatoes. Place all the veggies into a large bowl and add the chopped cilantro.
- Assemble the Salad: Once the chicken and corn are cooked, let the chicken rest for a few minutes before slicing it thinly. Cut the kernels off the corn and add both the chicken and corn to the salad bowl.
- Dress and Serve: Drizzle the salad with olive oil and lime juice, then toss gently to combine. Season with additional salt and pepper to taste. Serve immediately and enjoy!
