This flavorful stir-fry combines tender chicken, crispy veggies, and a tangy, sweet orange sauce served over soft rice noodles. It’s a quick and satisfying meal that’s packed with fresh flavors, perfect for a busy weeknight dinner.

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil (for cooking)
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1/2 cup snap peas, trimmed
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 2 tablespoons orange juice (freshly squeezed)
  • Zest of 1 orange
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon cornstarch (optional, for thickening)
  • 8 oz rice noodles (or preferred noodles)
  • Sesame seeds and sliced green onions for garnish (optional)


Instructions:

  1. Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and set aside.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-6 minutes, or until browned and cooked through. Remove the chicken from the pan and set it aside.
  3. Stir-Fry the Veggies: In the same skillet, add the remaining tablespoon of oil. Add the bell pepper, onion, and snap peas. Stir-fry for 3-4 minutes, until the vegetables are just tender but still crisp.
  4. Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, orange juice, orange zest, honey, and cornstarch (if using). Pour the sauce into the skillet with the vegetables, stirring to coat. Cook for 1-2 minutes until the sauce thickens slightly.
  5. Combine and Serve: Return the cooked chicken to the skillet and toss everything together. Add the cooked rice noodles and toss to combine, ensuring the noodles are well coated with the sauce.
  6. Garnish: Garnish with sesame seeds and sliced green onions, if desired. Serve hot and enjoy!
