Ingredients:
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream (or milk for a lighter version)
- 1 cup spinach (optional)
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/4 cup grated Parmesan cheese (optional for garnish)
- Fresh parsley (optional for garnish)
Instructions:
- Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt, pepper, and oregano, and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- Cook Orzo: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened. Add the orzo and cook for 1-2 minutes, stirring occasionally, until lightly toasted.
- Simmer: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer, then cover and cook for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
- Combine Chicken: Once the orzo is cooked, return the chicken to the skillet and stir to combine. If using spinach, add it at this point and cook for 2 minutes until wilted.
- Garnish and Serve: Top with grated Parmesan and fresh parsley if desired. Serve immediately and enjoy!
