Bacon + guacamole = our ideal combo always. Put them in bite-sized form like these in these snack bombs, and we truly can't get enough. Homemade guacamole is rolled into pieces of bacon in these keto-friendly bites that are perfect for snacking on throughout the day.

How to make Bacon Guac Bombs?


Ingredients:

  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup red onion, finely chopped
  • 1/2 jalapeño, minced (optional)
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste
  • 8–10 slices bacon (thin or regular cut works best)

Instructions:

  1. Make the Guacamole Filling: In a bowl, mash the avocados and mix with lime juice, onion, jalapeño, cilantro, salt, and pepper. Chill for 10–15 minutes to firm up slightly.
  2. Form the Bombs: Scoop guac into small balls (use a tablespoon or small cookie scoop). Place them on a parchment-lined tray and freeze for about 20–30 minutes, just until firm.
  3. Wrap with Bacon: Cut bacon slices in half if needed. Wrap each guac ball with a piece of bacon, fully enclosing the guac. Secure with toothpicks if necessary.
  4. Cook:
  • Air Fryer: Cook at 375°F (190°C) for 10–15 minutes, flipping halfway.
  • Oven: Bake at 400°F (200°C) for 20–25 minutes on a rack over a baking sheet.
  • Cook until bacon is crispy all over.
  • Cool Slightly & Serve: Let rest for 5 minutes. Serve warm or at room temp.
