BLT Egglets:great for brunch lovers or high-protein snack fans
Ingredients (Makes ~6 egglets):
- 6 large hard-boiled eggs, peeled and halved
- 4 strips crispy bacon, chopped
- 1/2 cup chopped lettuce (romaine, butter, or iceberg)
- 1 small tomato, diced
- 2 tablespoons mayonnaise
- Salt and pepper to taste
- Optional: chopped chives or a sprinkle of paprika
Instructions:
- Prepare the Egg Bases: Slice hard-boiled eggs in half lengthwise. Carefully remove yolks and place them in a mixing bowl.
- Make the BLT Filling: To the yolks, add mayo, salt, pepper, and chopped bacon, lettuce, and tomato. Mix until well combined. Adjust seasoning to taste.
- Fill the Egg Whites: Spoon or pipe the mixture back into the egg white halves.
- Garnish & Serve: Top with extra bacon bits or herbs. Chill before serving for best flavor.
