Brunch in a Bite: BLT Egglets Done Right

They’re kind of like a cross between a BLT sandwich and egg salad

BLT Egglets:great for brunch lovers or high-protein snack fans


Ingredients (Makes ~6 egglets):

  • 6 large hard-boiled eggs, peeled and halved
  • 4 strips crispy bacon, chopped
  • 1/2 cup chopped lettuce (romaine, butter, or iceberg)
  • 1 small tomato, diced
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste
  • Optional: chopped chives or a sprinkle of paprika

Instructions:

  1. Prepare the Egg Bases: Slice hard-boiled eggs in half lengthwise. Carefully remove yolks and place them in a mixing bowl.
  2. Make the BLT Filling: To the yolks, add mayo, salt, pepper, and chopped bacon, lettuce, and tomato. Mix until well combined. Adjust seasoning to taste.
  3. Fill the Egg Whites: Spoon or pipe the mixture back into the egg white halves.
  4. Garnish & Serve: Top with extra bacon bits or herbs. Chill before serving for best flavor.
